Peanut and Almond Brittle – Simply Crumbly


I wanted to eat nut brittle, so I searched for many nut brittle recipes, but why don't any of them have walnuts? I wanted to make nut brittle with walnuts.
I combined several's methods and experimented several times to make my favorite nut brittle. I thought the walnuts weren't fragrant enough, so I added a little peanuts. It's simply delicious and crispy! It's crispier than biscuits.
Flour: Low-gluten flour (ordinary flour)
Oil: Strongly recommend using lard! It's more crispy! If not, use peanut oil
Sugar: Recommend using powdered sugar, if not, use caster sugar
This recipe can make 24 biscuits, just two trays

Ingredients

Low-gluten flour 180g lard/peanut oil 120g walnuts + peanuts 150g egg 1 (55-60g about) powdered sugar/caster sugar 80g salt 2g baking powder 2g baking soda 2g

Roast the walnuts and peanuts until fragrant

Beat into a powder, if you don't have a machine to crush, use a rolling pin to crush it as finely as possible, the finer it is, the more beautiful the finished product will be

120g lard, heat in microwave for 1 minute until semi-fluid


Add salt, powdered sugar/caster sugar and egg, beat evenly with an electric beater for about 30 seconds

Mix flour and baking powder and baking soda and pass through a sieve


Add to the previous walnut paste, mix with a folding method until a dough is formed, note, don't knead it, otherwise it won't be crispy

Divide the dough into two portions, gently and softly arrange it into a rectangular shape, then cut it into 12 portions
