Making boba tea at home is so satisfying, it's packed with ingredients. I made black sugar pearl taro boba tea, with layers of taro, black sugar pearls, milk foam, and yellow bean paste glutinous balls – every bite is bursting with happiness!

Tips:

1When making pearls, you must use boiling water, otherwise the starch will become difficult to form and operate. If the dough is too thin, add a little starch, if it's too dry, add a little water. When cooking pearls, once the pearls float, cook for about 10 minutes, always turn off the fire, this will make the pearls more chewy.

2When making the taro filling, if you don't use purple sweet potato, you can use purple sweet potato powder. I mainly use it for a beautiful color. When making the taro filling, milk, cream, and white sugar can be adjusted according to personal taste. Taste it as you add it. I especially like to eat taro so I added a lot of taro in this boba tea. You can adjust according to your personal preference.

Ingredients:
Taro: 200g taro, 50g purple sweet potato, 50g milk, 50g cream, 20g white sugar, 10g milk jelly
Black Sugar Pearls: 90g sweet potato starch, 60g water, 55g sugar, 20g black sugar, 30g water
Milk Tea: 2 black tea bags, 300g milk, 10g milk jelly, 100g water
Salty Milk Cap: 150g cream, 30g cream cheese, 30g milk, 20g white sugar, 2g salt (optional)
Other: 3 glutinous balls, yellow bean powder
Steps: 1First make the pearls, prepare sweet potato starch, you must use sweet potato starch to make pearls, you cannot use other starches.




2Add sugar to the water and boil, pour into sweet potato starch, make a dough by hand (the amount I gave is for reference, because the amount of water will be consumed during cooking, if it's too dry, add water, if it's too wet, add powder, pay attention to it must be boiling water)



3Shape into small balls and make the size of pearls, this step takes a little time, you can watch TV while making pearls



4Boil water in a pot, add pearls and cook until the pearls float, turn off the fire and let it steam for 8 minutes



5Mix black sugar and water to make a concentrated sauce, add the cooked pearls and mix well, the black sugar pearls are done

5Now make the taro, cut taro and purple sweet potato into pieces and steam until cooked



6Add milk, cream, milk jelly, white sugar, and stir into a smooth purple sweet potato and taro puree. Regarding the amount of milk and white sugar, the amount I gave is just a reference, you can add it as you like, to your preferred sweetness.



7Now boil the milk tea, add 2 black tea bags to 100g hot water and steep for 5 minutes, remove the tea bags. I used Ceylon black tea.



8Add 300g milk to the black tea water and cook until it's slightly boiling, add milk jelly, the milk tea is done



9Pre-cook the glutinous balls, string them up, milk cap material is whipped to a flowing state


10Finally, assemble the cup, first put taro puree, black sugar pearls, taro puree, milk tea, milk cap, and finally put the pre-cooked glutinous balls, sprinkle yellow bean powder.
