Ingredients needed:
White dough: 200g of flour, 60g of water, 1 egg, 20g of white sugar
Red dough: 200g of flour, 60g of water, 1 egg, 20g of red sugar
Step 1: Divide the dough into white and red dough according to the ratio. Since the flour and water content are relatively low, it's difficult to knead smoothly. At this time, cover it with plastic wrap and let it rest for 10 minutes, and then it will be very easy to knead smoothly. After kneading, cover it with plastic wrap and let it rest for 10 minutes.


Step 2: After the dough is rested, don't knead it anymore, as too much kneading will increase the gluten content, which will make it very difficult to spread the dough when making the dough skin. Directly flatten the dough and spread it into a dough skin about one coin thick.


Step 3: Stack the two dough skins together, and before stacking, apply some moisture to the bottom dough skin to make it stick firmly. Then stack the dough skins one by one and roll them up, while pulling them. Make sure to roll them tightly. After rolling, put them in the refrigerator to freeze for 1-2 hours.
