Braised Beef with Small Potatoes

Ingredients:Beef 500g Small Potatoes 300g 6pcs Garlic 3 cloves Green Onion 2 heads Cilantro roots 10pcs Peanuts 50g
Seasonings:Maltose 3 tablespoons (45ml) Salt 1/2 teaspoon (3g) Cooking Wine 1 tablespoon (15ml) White Sugar 1 teaspoon (5g) Sesame Oil 1 teaspoon (5ml) Cornstarch 2 tablespoons (30g)
Instructions:
1Cut the beef into 1.5cm cubes, marinate with salt, cooking wine, maltose, white sugar, sesame oil and cornstarch for 20 minutes. Wash the peanuts, soak in water for 20 minutes.
2Wash the small potatoes and cut them in half (if the small potatoes are large, cut them into 3cm pieces). Cut the green onion into slices (if using onion, cut it into slices). Peel and smash the garlic. Wash the, cut into 5cm segments after removing the stem.
3Pour oil into the flat pan, heat to 70% hot, put in the potatoes, continue to fry until golden brown, turn over and fry on the other side. After frying, use a spatula to push the potatoes to one side, sauté garlic, green onion and cilantro roots in the oil.
4Pour in the marinated beef and stir-fry for 2 minutes, then pour into another pan (no need to change the pan if the flat pan is large). Add boiling water, put in the soaked peanuts, cover the pot and heat over high heat until boiling, then turn the heat down to medium and simmer for 45 minutes.
5Before serving, add the, mix evenly and turn off the heat. The residual heat of the dish is just enough to heat the and maintain its color.
