Required ingredients: cilantro, green onions, ginger, sesame oil, Chinese black vinegar, light soy sauce, chili oil, vegetable oil, toasted sesame seeds, salt.
Step 1: Prepare all ingredients and make chili oil in advance (Chili oil should be available in every place, but the methods and flavors may vary).
Step 2: Then take a bowl and mix vegetable oil and sesame oil in a ratio of 3:1, Chinese black vinegar and light soy sauce in a ratio of 3:1. It is crucial to mix them in this ratio, as it’s the key to delicious sour soup dumplings.

Step 3: Add chopped green onions, ginger, toasted sesame seeds and appropriate amount of salt into another small bowl, pour hot vegetable oil over them to release their fragrance.
Step 4: Pour the sauce from Step 2 into the bowl with Step 3, and mix evenly. The sour soup seasoning for the dumplings is ready.
Step 5: Then put the dumplings into a bowl, scoop in an appropriate amount of dumpling soup, then scoop in some of the prepared seasoning into it, and sprinkle with chopped cilantro. Serve immediately.

Step 7: Then pinch the dumpling wrappers into dumplings. Bring a pot of water to a boil, add a little salt, and put the dumplings in. As you put the dumplings in, gently push with a skimmer to prevent them from sticking to the bottom of the pot.
Step 8: Cover the pot, wait for the water to boil, add half a bowl of cold water. When the water boils again, add another half bowl of cold water. Add three times in total, and wait until the dumplings float to the surface.
