Before having children, I used to make this dish, usually between two lotus roots I would add some meat just to save time and effort, and it tasted good.
But today I was making it for my children, so I thought it would be best if it was a little more nutritious, so I added more ingredients, and it tasted completely different.
Lotus root contains a lot of dietary fiber, which can increase appetite and promote digestion for babies. Don't forget to supplement iron, adding meat, and of course, vitamins can't be less, so let's add some broccoli. Adding rice, and pan-frying is great too!

1. Blanch and chop the broccoli into small pieces for later use.
2. Mix the pork mince with a little soy sauce and ginger slices, marinate for 10 minutes.

3. Peel and slice the lotus root thinly, put it in a bowl of water for later use.
Tips: The thinner the lotus root slices, the better. Friends with good knife skills can cut them directly with a knife; soaking lotus root is to prevent oxidation and discoloration. If exposed to air, it is easy to darken.

4. Mash the rice into a paste.

5. Add the ginger slices from the pork mince to a large bowl, add the pork mince, then add rice paste, starch, and chopped broccoli, and add a little salt to season.
Tips: If your baby likes the natural taste of the ingredients, you don't need to add salt.

6. Mix all the ingredients evenly.
7. Take a lotus root slice, put a suitable amount of filling on it, and apply it evenly.

8. Cover the filling with another lotus root slice and gently squeeze it together.
Tips: The filling is quite sticky, don't worry the two lotus roots will spread open.

9. Heat a pan, brush with oil, and put the lotus root pie in, cover with a lid.

10. During the frying process, always use a small fire and turn it several times.
