Rural Moms' Red Potato Recipe: Crispy and Delicious Without Adding Any Water

1Prepare a red potato, preferably a red-hearted one for better texture. Peel and slice it into thin pieces;

2Add 2 tablespoons of white sugar to the sliced potato pieces. Steam for about 15 minutes until completely softened, then take out of the pot and cool down;

3After cooling, add 100g of sweet rice flour and 30g of cassava flour. Adjust the ratio based on the weight of the potatoes; cassava flour is added for two purposes: to fix the shape and to increase the elasticity of the potato balls;

4Once the ratio is adjusted, knead the mixture into smooth glutinous rice balls. Remember, don't add any water during the process; use the moisture released during steaming; then, inject an egg into each ball, and stir evenly with chopsticks;
5Prepare a plate and pour in some breadcrumbs. Coat all the egg-coated glutinous rice balls with breadcrumbs and set aside;

6Prepare a small pot and pour in two-thirds of vegetable oil. When the oil reaches 70% hot, gently fry the balls over low heat. If you don't know how to test the oil temperature, you can see that the chopsticks inserted into the oil bubble;

7Keep watching and stir the balls constantly during frying, because glutinous rice with added sugar will easily burn if not constantly stirred. Fry until the balls are golden yellow and easy to pick up with chopsticks;

8After taking them out, remember to use a paper towel to absorb excess oil;
This simple and delicious glutinous potato ball is ready. To make this home-style snack, just pay attention to these two points: first, don't add water during the whole process, and second, the ratio of sweet rice flour to cassava flour should not exceed 7:3;
