Homemade Eggplant

Many friends like to eat eggplant but are afraid of the complicated preparation. Let's solve this with the principles of physics – first use salt, then coat with starch, resulting in a perfectly crispy exterior and tender interior! It's delicious with rice, porridge, and noodles alike.

1. Ingredients: Eggplant (straight cuts are visually appealing).
2. Seasonings: Green onions, garlic, (chili peppers).
3. Seasonings: Salt, sugar, soy sauce, oyster sauce.

4. Steps:
1. Cut the eggplant into oblique slices, roll them into small pieces, add salt and mix well, and marinate for 10 minutes.

2. Chop the garlic and chili peppers (optional) into minced pieces, mix with sugar, soy sauce, oyster sauce, and a little water to make a sauce, and set aside chopped green onions.
