Spring Cold and Rain, Spring Warm and Rain: Spring Season Needs Stomach Care, White Pepper Pig’s Belly Soup – Warming the Stomach and Dispelling Cold and Dampness

Ingredients:
Pig's belly, one.

White peppercorns, a handful.

Rice vinegar, ginger slices, starch, goji berries, salt.

Instructions:
Fresh pig's belly, rub with salt repeatedly several times, wash clean, remove viscous liquid.
Flip the pig's belly, scrape off the grease.
Rub with starch again.
Wash with rice vinegar again to remove the fishy smell.

Crush white peppercorns with the back of a knife, put into a bag or wrap in muslin.
Stuff into the pig's belly and tie both ends.
Place the pig's belly in a cold pot, skim off any foam after boiling.
Add ginger slices, simmer over low heat for 2 hours,
Add goji berries and cook for 5 minutes, turn off the heat.
Take out the pig's belly, discard the spice bag,
Place the cut pig's belly back in the soup and simmer until it boils, add salt to taste,

Turn off the heat.
