Double Chili with Dried Fish

Ingredients: Dried Fish, Garlic, Ginger, Green & Red Chili Peppers, Sichuan Peppercorns, White Sugar, Chili Slices, Oyster Sauce, Light Soy Sauce, Salt, Cornstarch
Instructions: 1. Wash the dried fish and place it in a steamer, steam for 5 minutes. In a bowl, combine Oyster Sauce, Light Soy Sauce, White Sugar, Salt, and Cornstarch, add a little water to adjust into a sauce.
2. Cut Garlic, Ginger, and Green & Red Chili Peppers into thin strips and prepare them.
3. Heat oil in a pan, add Garlic, Ginger, and Sichuan Peppercorns to fragrant.
4. Add the dried fish into the pan to fragrant, sprinkle 1 teaspoon of White Sugar.
5. Stir-fry until the surface is slightly charred, add Chili Peppers and stir-fry.
6. Pour in the sauce and stir-fry until it thickens.
Colorful Refreshing Shrimp

Ingredients: Shrimp 350g, Cucumber 30g, Carrot 30g, Corn Kernels 30g, Oil 1 Large Spoon, Salt 1 Small Spoon, Baijiu 1 Small Spoon, Cornstarch 2 Small Spoons;
Instructions: 1. Wash the Shrimp, remove the shrimp shells, add 1 small spoon of Salt, add 1 small spoon of Baijiu and marinate for 15 minutes;
2. Add 2 small spoons of Cornstarch to the marinated Shrimp; Mix evenly.
3. Slice Carrot and Cucumber into small dices;
4. Add 1 large spoon of Oil in a pot, stir-fry Shrimp in the hot oil, when Shrimp turns color, drain it out.
5. In another pot, add a little Oil, slice Carrot and Cucumber dices and stir-fry until they are slightly tender.
6. Add a little Salt, add Corn Kernels and stir-fry.
7. Then add the previously stir-fried Shrimp and stir-fry evenly, then stop the fire.
Shrimp, Wood Ear Mushroom and Egg Omelette
Ingredients: 2 Eggs; Dried Wood Ear Mushrooms, Fresh Shrimp 350g; Green Onion, Ginger, Ground Ginger
Instructions: 1. Cut Dried Wood Ear Mushrooms into small pieces, use Liquor and Salt to marinate Shrimp for a moment.
2. Beat Eggs with a little Water, heat oil and stir-fry Eggs with Fork until it is coagulated and set, then drain it out.
3. Use the bottom oil to fragrant Ginger and Green Onion, add Dried Wood Ear Mushrooms and Shrimp to stir-fry for a moment.
4. Pour in the stir-fried Eggs, add Salt, sprinkle Green Onion.
Yellow Cucumber & Carrot Stir-fry with Meat

Ingredients: Lean Pork, Yellow Cucumber, Red Carrot, Salt, Cornstarch, Oil, Sugar
Instructions: 1. Cut Lean Pork into slices and add a little Salt, mix with Water Cornstarch and marinate for a while.
2. Slice Yellow Cucumber and Red Carrot into slices.
3. Heat Oil in a pot, stir-fry Pork slices, drain Pork slices out.
4. Heat Oil again to soften Carrot, then add Yellow Cucumber and stir-fry for a moment.
5. Add Pork slices and mix, add Salt and Sugar to adjust flavor and cook out.
Five-Spice Crispy Pork
Ingredients: Pork Belly, Green Onion, Ginger, Garlic, Sugar, Cornstarch, Eggs, Pepper, Tomato, Wood Ear Mushrooms
Instructions: 1. Cut Pork Belly into slices, mix with chopped Green Onion, Ginger, and Garlic.
3. Add Salt, Sugar, and Pepper to season evenly.
4. Beat Eggs and add Cornstarch to mix until no powder is left.
5. Place Pork slices in, marinate for 30 minutes.
6. Heat Oil to 60% heat, add Pork slices, fry both sides until golden brown, drain it out.
7. Heat Oil again, re-fry for 30 seconds.
8. Add Ginger, Garlic and Tomato to fragrant, stir-fry until Tomato softens and releases juice.
9. Add Water and bring to a boil, turn down the heat and simmer with Dried Wood Ear Mushrooms and fried Crispy Pork for 10 minutes.
10. Add Salt, Sugar and Pepper to taste.
