Home-Style Ginger Braised Duck Soup – Smooth Texture, Rich Broth, Delicious and Filling
Ingredients: Duck, Ginger, Cooking Wine, Old Soy Sauce, White Sugar, Salt, Light Soy Sauce, Garlic, Star Anise, Dried Chili Peppers, Fermented Bean Paste, Green and Red Bell Peppers
Instructions:
1Wash and cut the duck into chunks, slice the ginger, and cut the green and red bell peppers into diced pieces. Slice the old ginger and garlic into slices. Prepare dried chili peppers by slicing them into circles.
2Heat oil in a pot, sauté the old ginger and garlic until fragrant, then add the duck and stir-fry until slightly yellow.
3Add star anise, dried chili peppers, light soy sauce, old soy sauce, a little cooking wine, white sugar, and fermented bean paste, and stir-fry evenly. Pour into a clay pot.
4Add an appropriate amount of water to cover the duck pieces, cover the pot and simmer for about 15 minutes.
5Finally, add the diced green and red bell peppers, sliced ginger, and adjust the seasoning with an appropriate amount of salt, cover the pot and simmer for 3 minutes.
