Watermelon Peel Jam
Ingredients
Watermelon Peel 550g or so
White Sugar 80g

1. Wash the watermelon peel, remove the thin green skin on the outside, and then cut the flesh into small pieces. —— For hygiene, when preparing watermelon, it is best to cut the red flesh of the watermelon with a fruit knife and reserve the peel
2. Use a blender to break down the flesh pieces —— I added 100g of water to facilitate pouring
3. Pour the chopped flesh into a stainless steel pot and add white sugar, stirring until well combined
4. After boiling, reduce the heat and simmer gently, stirring with a spoon halfway through
5. Continue cooking until the water is evaporated, and then turn off the heat. Allow to cool to warm before packing into jars or containers. Once completely cooled, seal and refrigerate for 2-3 days before eating. The jam will become thicker than before, so you can eat it. Use a clean, dry spoon to scoop.
