1First, put 500 grams of medium-strength flour in the basin, and use 360 ml of boiling water, while pouring, use chopsticks to stir until smooth, after a slight cooling, and then knead into a dough. Because it's a completely cooked dough, kneading time is a little sticky, you can knead while spreading a little dry flour on your hands to prevent sticking, and after it's done, cover it with a lid and let it proof for 10 minutes.

2In a small bowl, put 2 spoons of flour, 2 spoons of sugar, and 1 spoon of sesame seeds, and stir until smooth to make the filling (the sesame seeds must be cooked).
3After the dough is proofed, sprinkle some dry flour on the cutting board to prevent sticking, put the dough on it and knead until smooth and delicate, then add an appropriate amount of dough, and shape it into a dough, size can be arbitrary, rub the dough into a ball, and press a small pit in the middle, and put the filling in the middle, then tighten the mouth and pinch it together, and use a rolling pin to roll it into a round cake.

4Preheat the pancake pan and brush with oil, put the pancake on it, and brush another layer of thin oil on top to lock in the moisture of the pancake, cover with a lid, and cook until one side is golden brown, then flip it over and cook for about 4 to 5 minutes, and the middle will rise, and cook both sides until golden brown, and you can take it out.
