Ham and Egg Steamed Dish
Ingredients: 2 eggs, 1 ham sausage, 2 egg tofu, scallion to taste.
Seasonings: Salt, light soy sauce, sesame oil.
Instructions:
1Prepare all the materials.
2Crack the eggs into a bowl, add 2 grams of salt, and slowly pour in the hot water while stirring constantly until fully mixed. After mixing, set aside.

3Wash the egg tofu, cut it into two pieces, squeeze out the egg tofu, and cut it into slices.

4Remove the skin from the ham sausage and cut it into small pieces for preparation.

5Place a deep dish, first put the sliced egg tofu, then pour in the previously prepared egg mixture, and add the sliced ham sausage pieces.

6After preparation, put it in a steamer and steam it after the water boils. The steaming time is about 8 minutes, and the fire should be medium, not too large.
7After steaming, drizzle with light soy sauce and sesame oil, and sprinkle with chopped scallion.

8This dish is beautiful when spooned – one spoonful at a time. The egg tofu is tender and the steamed egg is also tender and smooth, paired with ham sausage, it's really delicious.

Extra Notes:
I like to add hot water to steamed eggs, slowly adding the egg mixture, and fully mixing it. This makes the steamed eggs more tender and smooth.
When steaming eggs, use medium heat. High heat will easily produce honeycomb. If the steaming time is too long, honeycomb will appear. The eggs I steamed today had some small honeycomb because the fire was too high, but they were still okay to eat.
Ham sausage is a preserved meat with a salty flavor, and the egg mixture also contains salt. You don't need to add too much light soy sauce.
Replace the ham sausage with stir-fried meat, and this dish will be even more delicious.
