2Peel and cut the tomatoes into thick slices, cut the scallions into segments and ginger slices for use.

3Pour a little vegetable oil into the pot and heat it up. Add scallion white and ginger slices to sauté and then add the tomatoes and stir-fry until the soup thickens.

4Add a pot of water, bring to a boil over high heat and then simmer over medium heat for 10-15 minutes, if you don't have time, you can simmer over low heat.
