Simple and Affordable Three Dishes and a Soup: Delicious, Easy to Make, and Only 30 Yuan

Corn and Peas with Shrimp

Ingredients

150g peas, 150g sweet corn kernels, 80g shrimp, 3g ginger, 5g garlic, 2g salt, 2g cornstarch, 10ml edible oil.

Method

1. Add a certain amount of water to the wok and boil over high heat. Blanch the corn kernels and green peas until the water boils, about 1 minute, so that the two ingredients float, use a sieve to take them out and put them in a cold water basin for cooling, the alternating cold and hot makes the corn texture more crisp.

2. After the corn kernels and green peas are cooled, take them out and drain them. Because this dish needs to be thickened with starch to enhance freshness and color, prepare cornstarch in advance. Use a certain amount of water to make a thin cornstarch slurry, which is used for thickening before cooking, to make corn and peas with shrimp look more translucent and fresh.

3. Heat the wok over medium heat until it is hot to the touch. Pour in a certain amount of edible oil into the wok, heat it up, and when there is a slight smoke, pour in ginger and garlic minced.

4. Shrimp is one of the ingredients that cooks relatively quickly. Stir-fry until it turns pale pink, don't take it out of the wok, and pour it directly into the blanched corn and pea granules and stir-fry over high heat.

5. Stir-fry the corn shrimp and green peas evenly, add a certain amount of salt for seasoning, and before cooking, pour in the prepared cornstarch slurry in circular patterns into the wok, stir-fry corn and peas with shrimp to create a thin layer of sauce, and stir-fry evenly to make the ingredients absorb the flavor and thicken before cooking and serving.
