Waterless braised pork + steamed corn

Waterless is a way of making braised pork using rice wine instead of water, which is very delicious. This method will not have a bitter wine taste because the high temperature volatilizes it. It is paired with corn to enjoy salty, rich and crispy, and fresh and sweet.
Ingredients:
500g pork belly (a large piece)
2-3 slices of pork skin
1 corn on the cob
2 chili peppers
5-6 slices of ginger
8 cloves of garlic (crushed)
100g sugar
600ml rice wine
1 bowl of soy sauce
3 star anise
Appropriate amount of oil
Instructions:

1Heat a large pot over high heat, add star anise and stir-fry until fragrant, remove and set aside

2Fry the pork belly until cooked, remove and set aside

3Pour a little oil into the pot, and then stir-fry the pork belly over medium heat until it is golden brown and crispy, and then remove it
4Add sugar to the pot over medium heat and stir-fry until caramelization

5Add garlic and ginger, stir-fry until fragrant

6Add pork belly and pork skin

7Add soy sauce, rice wine to cover the meat, add star anise, cover the pot and simmer over low heat for 1 hour

8During the process, add corn to steam (steam for 5 minutes to complete), after the time is up, the braised pork is finished

The thickness of the pork belly should be about 3cm, and the bite will be more juicy and flavorful
