Almond Jelly (with Rock Sugar and Osmanthus Flowers), Super Satisfying
Almond Jelly
With a big sun on your head, and two slices of snow in your stomach. After eating this tofu soaked in sweet water, your heart will surely soften.

Instructions:

1. 60g almonds soaked in warm water for 1 hour, remove the skin. Add 200ml water, blend into a puree, filter with cheesecloth to extract almond juice.

2. 3g gelatin, rinse, soak in 200ml water, pour into a pot with the water, add a few pieces of rock sugar and cook until dissolved (not too much, to be added in the final step).

3. After dissolving, pour in almond juice, 250ml whole milk, stir evenly, pour into square containers, remove bubbles and residue.
4. After setting, refrigerate for 2 hours until it solidifies into a jelly-like consistency. Invert to unmold, cut into small pieces, drizzle with rock sugar water and osmanthus flowers, enjoy~
