Spicy and Sour Cow Stomach

Ingredients: Cow Stomach, Small Celery, Dried Chili Peppers, Sichuan Peppercorns, Chili Peppers, Green Onion, Fresh Chili Peppers; Cooking Oil, (Liáo jiǔ - Soy Sauce), Salt, Chili Oil, Sichuan Peppercorn Oil, White Pepper.

Instructions:

1 After buying the cow stomach, if you are worried about frying it directly, you can cut it into pieces and boil it to cook for a while. You can also put it whole in a steamer and cut it into pieces after it's cooked.



2 Prepare vegetables and seasonings, cut the celery into segments, cut the chili peppers into pieces, mince the ginger, and slice the green onion. I like to use small celery to make this stir-fry, I feel the fragrance is more intense. Large celery or Western celery is used to mix salads or make juice.



3 Prepare dried chili peppers and Sichuan peppercorns, chili oil and Sichuan peppercorn oil. I used chili oil and Sichuan peppercorn oil. There are many varieties of dried chili peppers, I used this one, the spiciness is not ordinary, it is fragrant, family members can accept it, if you like eating very spicy, you can use more spicy ghost pepper.



4 Pour cooking oil into the pot, after the oil is hot, add green onions and chili peppers to sauté,
