Skillet Soufflé Pancake Recipe

  1. Separate egg yolks and egg whites, mix sour yogurt, low-gluten flour, and egg yolks until smooth. (If using regular flour, place it in a plate, press it down, make several holes, cover with cling film, steam for 15 minutes, cool, and knead it into a fine powder. Or add some cornstarch, high-gluten flour is for bread making.)
  2. Batter
  3. Add a few drops of lemon juice to the egg white to remove the fishy smell, add sugar (you can add it all at once) and beat until stiff peaks form
  4. Take one-third of the egg white and mix it with the egg yolk evenly
  5. Add the remaining egg white to the egg yolk mixture and mix evenly
  6. Heat a non-stick skillet over low heat with a small amount of oil (any flavorless oil, such as corn or soybean oil) – just a little is enough. Use a spoon to put in four portions of the batter, which can be a little higher. Pour a small amount of water into the pan – about 10ml – without pouring it on the batter.
  7. Cover and steam for 5 minutes
  8. After 5 minutes, flip and steam for 2 minutes

Dust with a little powdered milk or powdered sugar, and you can add sour yogurt and strawberry sauce – whatever you like!
