Tomato Rice Egg Pancake
Ingredients
250g Cooked Rice
30g Corn Kernels
6g Dried Shrimp
3 Eggs
1 Tomato
1 Green Onion (Scallion)
1g Salt
Vegetable Oil – As Needed

- 1 -Soak 6g dried shrimp in water for 30 minutes.
You can also substitute with dried scallops or fragrant mushrooms for a richer flavor.

Cut the tomato in half and poke a cross with a knife. Boil in hot water for about 5 minutes.

Chop the green onion (scallion) into flowers.

Peel the boiled tomato and chop it into small pieces.

Pour in 250g cooked rice, add 30g corn kernels, dried shrimp, and green onion.

Whisk in 3 eggs and add 1g of salt.
