Beef and Potato Stir-fry Ingredients: Round eggplant, potato, green pepper, garlic, scallions, dry chili peppers, 1 small spoon of salt, 2 spoons of soy sauce, 1 spoon of oyster sauce, half a bowl of water starch. Method: 1. Prepare the ingredients, cut the eggplant into 1.5*1.5cm small pieces, add 1 spoon of starch and mix well, so that it can be fried without absorbing too much oil when frying. 2. Peel and cut the potato into pieces, cut the green pepper into small pieces, mince garlic, chop scallions. 3. Add a lot of oil to the pot, heat the oil, add the potato pieces and fry until the surface is slightly golden brown, scoop out and set aside. 4.
