Hello everyone, today I'm going to teach you how to make a dish that everyone loves – 'White Cabbage with Noodles' (Bai Cai Dan Niu Tiao). This dish is a very common home-cooked meal for Northerners, just like me, I'm a big fan of White Cabbage with Noodles.

White Cabbage with Noodles
Ingredients White Cabbage, Noodles, Tofu, Star Anise (Dry Chili Pepper), Sichuan Flower (Dried Flower Bud), Green Onion, Ginger, Garlic, Salt, Cooking Oil, Oyster Sauce, Chicken Essence, Fermented Black Beans (Black Bean Paste), Chili Sauce
Method & Steps
1First, prepare a small handful of sweet potato noodles. After preparing the noodles, you need a small bowl of water, and soak them for half an hour.
Then, chop the white cabbage into pieces, and wash them clean with water, then cut the white cabbage leaves and the white cabbage heart into slices and put them into bowls.
2Prepare the tofu, soak it in water for 10 minutes, then cut the tofu into small pieces and put it into a bowl. Tofu has a slightly fishy smell, so soaking it in water can remove most of the fishy smell. Then, prepare a piece of ginger, cut it into slices, and put it aside. Prepare a few cloves of garlic, cut them into slices and put them aside. Prepare a section of green onion, cut it into chunks and put it aside. Finally, prepare a few dried chilies, cut them into chili rings and put them aside. Then, heat up the oil in a pan. Add a spoonful of cooking oil to the pan. When the oil is 60% hot, put the prepared tofu into the hot oil.

After the tofu enters the pan, simmer over medium heat, and fry the tofu until golden brown on one side. Use chopsticks to flip it over and fry the tofu until golden brown on both sides, then remove it from the pan and put it into a bowl.Then, heat oil in a separate pan. Add a lot of cooking oil to the pan. When the oil is hot, put all the prepared ingredients into the pan and fry out the fragrance. Then add a spoonful of fermented black beans and a spoonful of chili sauce. First add the prepared white cabbage heart to the pot and stir-fry for a minute, adding two spoonfuls of old hen's blood (Sha Zha), a spoonful of salt, half a spoonful of oyster sauce and a certain amount of water and bring it to a boil over high heat.

Take out the soaked noodles, dry the water, and then add them to the pot. Cover the pot with a lid and steam the noodles in the pot over high heat for 5 minutes. Wait until the noodles are completely cooked, then open the lid and add the prepared white cabbage leaves, and stir-fry them evenly. When the white cabbage leaves are cooked, add a little chicken essence for seasoning. Finally, cover the pot and let all the ingredients simmer in the pot for a minute. When all the ingredients are completely cooked and infused with flavor, you can take out the finished White Cabbage with Noodles from the pot and serve it in a bowl. The noodles are spicy and chewy, especially good with rice.Tips
