This method of making noodles is the best, no need to boil or steam, ready in 5 minutes, perfect for beginners
Hello everyone, welcome to Gongzi Shi Ji. Since the Chinese New Year, it's been over a month, and I've been staying at home every day. I can't go out to work or shop. The only fun is to make food at home, which can relieve boredom and fill my stomach, a two-in-one deal.

As a northerner, noodles are an indispensable part of our diet. Basically, I make noodles for lunch almost every day. Sometimes I boil them, sometimes I steam them, but today I want to make something different. I used to love eating the noodles from the night market stall – they were fragrant and not greasy, satisfying and filling.

Some people might think making cumin fried noodles is complicated, but it’s not. Now, noodle shops sell noodles specifically for stir-frying, so I don't need to spend effort making noodles myself, nor do I need to boil or steam them. I can just buy them and stir-fry them with the ingredients, and it only takes about 5 minutes from start to finish, which is simple and delicious, perfect for beginners. If you're interested, let's take a look at the recipe together.
The ingredients needed for cumin fried noodles are: 200g noodles, 1 egg, 1 small bunch of lettuce, 1 bunch of green beans, 1 sausage, scallions, vegetable oil, salt, soy sauce, and cumin.
Detailed steps for making cumin fried noodles:
First, do some preparation work. Although it's a replica of the night market stall, hygiene is very important. Cut the lettuce into pieces and rinse it under running water, then drain it and set it aside; wash the green beans and set them aside; cut the sausage into small pieces.

When all the ingredients are ready, you can start stir-frying. Put a wok on the fire and wait for it to heat up. When the wok is very hot, add a little vegetable oil, more than usual for stir-frying. Add scallions and sauté until fragrant, then beat an egg into the wok and stir-fry until the egg is slightly solidified;

Next, add the green beans, lettuce, and sausage and stir-fry until the vegetables are slightly cooked. Add salt and five-spice powder to adjust the flavor;
Then, add the noodles to the pot and keep stirring and frying until the noodles are separated and mixed with the vegetables. Then add a little soy sauce and stir-fry evenly. Finally, add cumin and stir-fry until it's evenly mixed and ready to serve.

Cumin fried noodle recipe summary:
1. I bought the noodles directly from the noodle shop; they are ready-made, which is more convenient. If you don’t have them, you need to steam them with fine noodles, then coat them with oil and let them cool before using;
2. The side dishes in cumin fried noodles can be freely combined. For example, night market stalls usually add chopped carrots, chopped cabbage, and onion slices. You can add whatever you like, or you can omit them;

3. When stir-frying noodles, you should add a lot of oil, otherwise the noodles will be too dry and difficult to chew. Also, keep stirring while stir-frying to ensure that all the ingredients are moving in the pot. If you can flip the pot, that's the best; if not, just use your arms to stir and flip it;
4. Add soy sauce for flavoring and coloring. Some people also add old hen’s blood, but I think the color is too strong, so you can choose freely. Also, don’t forget to add cumin, which is the soul of the night market stall’s cumin fried noodles. By the way, if you like spicy food, you can also add chili.
