Huaiyang Cuisine Master Makes Fish Tail and Pork Belly – A Delicious and Filling Dish



Ingredients:
Fish Tail 1 piece, Pork Belly 50g, Yam Powder 150g, Spicy Salted Vegetable 106g, Ginger Slices 15g, Garlic Cloves 20g, Green Onion (Scallions) 5g, Coriander (Cilantro) 5g.


Seasonings:
Vegetable Oil (Canola Oil) 100g, Cooking Wine (Shaoxing Wine) 20g, Water Chestnut Flour (Sweet Potato Starch) 10g, Light Soy Sauce 5g, Salt 3g, White Sugar 2g, Vinegar 2g, White Pepper 2g.
Instructions:
1. First, wash the fish tail thoroughly;


2. Then, slice the fish tail into strips;


3. Slice the pork belly into pieces;


4. Heat the pot over high fire;


5. Add an appropriate amount of vegetable oil;


6. Add the pork belly pieces to the pot;


7. Stir-fry the pork belly until cooked and fragrant;

8. Add ginger and garlic cloves to the pot;


9. Immediately add the fish tail to the pot;


10. Sear both sides of the fish tail lightly;


11. Pour in cooking wine;


12. Add 2 spoonfuls of water chestnut flour to stir-fry;


13. Add an appropriate amount of hot water;


14. Then add yam powder to the pot;


15. Season with 5g light soy sauce;


16. Season with 3g salt;


17. Season with 2g white sugar;

18. Add the spicy salted vegetable to the pot;


19. Add the green onion (scallions) to the pot;


20. Season with a little white pepper;


21. Finally, add 2g vinegar;


22. Cover and simmer over high heat for 5 minutes;


23. Then, reduce the heat to low and simmer for 8-10 minutes;


24. Bring to a boil to thicken the broth;


25. Take out of pot and serve in a dish;


26. Sprinkle with coriander (cilantro) segments.
