Ingredients
50g Glutinous Rice Flour (crust)
15g Cornstarch
30g Powdered Sugar
20g Heavy Cream
75g Water
100g Heavy Cream (filling)
10g Granulated Sugar
Oreo Crumbs
30g Glutinous Rice Flour (for dusting)
Mango, Strawberry
1Mix glutinous rice flour, powdered sugar, and cornstarch.
2Add water and heavy cream and mix well.
3Pass the dough through a sieve once.
4Put the dough in a pot and steam for 15 minutes. Place a plate on top to prevent moisture from entering the dough.
5While the dough is steaming, cook the flour. Add glutinous rice flour to a hot pan over low heat and cook until the flour is no longer starchy or slightly yellowish.
6Add butter to the steamed dough.
7First, stir with a spoon. When the temperature cools down to a comfortable temperature, knead it into a dough ball. (Don't directly knead the freshly baked dough to prevent burns.)
8Place the kneaded dough in a bag and refrigerate for half an hour.
9Beat heavy cream with granulated sugar until it reaches piping cream consistency.
10Lay out a sheet of parchment paper and sprinkle with cooked flour, then press the chilled dough into a cylindrical shape.
11Divide into 30g portions and shape into circles.
12Place the dough in a custard cup, and squeeze cream in the middle.
13Add strawberries or mangoes, according to your preference.
14Squeeze another layer of cream on top, seal the edge, and flip it over.
