Pumpkin Vine and Shrimp Rolls: Ingredients: 8-10 pumpkin vines, 200g shrimp Seasoning: (liao jiu - cooking wine), soy sauce, starch Steps: 1Wash the pumpkin vines and use a small brush to clean off the tiny hairs. 2Cut off the pumpkin vines' roots and stems, and cut the pumpkin vines in half. 3Use a spoon to scoop out the seeds inside the pumpkin vines, leaving space for the shrimp, to avoid wasting the pumpkin seeds. You can mix them with the shrimp later. 4Peel and clean the shrimp (I used pre-made shrimp slices this time for convenience). 5Put the shrimp slices in a little cooking wine and soy sauce, and mix with the remaining pumpkin seeds. 6Dust the cut edges of the pumpkin vines with starch to better hold the shrimp. 7Heat a pan with a little oil and pan-fry the shrimp-covered sides for about 3 minutes over low heat. 8When the shrimp turns red, flip it over. 9Add a little cold water, cover the pan with a lid, and steam for 1-2 minutes. 10When the water has evaporated, add a little soy sauce, shake the pan to evenly color the pumpkin vines, and you're done!
