Detailed Steps for Zhuan Gan Jian
Step 1:Pig liver (1 piece), soak in water to remove blood. Wood ear mushrooms, carrots, green peppers, and yellow onions cut into slices. Adding vegetables makes this dish more nutritious.


Step 2:
Remove the outer membrane from the pig liver and cut it into thin slices, then marinate with alcohol, starch, and salt. Heat oil in a pan until hot. Sauté scallions and ginger, then quickly slide in the pig liver.

Step 3:When the pig liver turns color, add the vegetables and continue to stir-fry. Add soy sauce, a little salt, water starch, and thicken with a glaze!

Tips for Zhuan Gan Jian
1. Pig liver must be repeatedly soaked in water before cooking because it is a major transit station for toxins in the body and a detoxification organ. Soaking in water removes toxins from the liver. 2. When stir-frying pig liver, do not focus on achieving a tender texture; stir-fry thoroughly.
