Making Potato Stir-fry: A Crucial Step Many Miss
Making potato stir-fry may seem simple, but many people often don't make it well, possibly because they're missing this step.
Ingredients:
2 medium potatoes, 1 chili, 2 scallions, 3 cloves of garlic, 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 teaspoon of flower pepper (or black pepper).

Instructions:
1. In a bowl, put in garlic, 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of sugar and 1 teaspoon of flower pepper or black pepper, mix well, prepare.

2. Peel and wash the potatoes, then cut them into thin strands.

3. Pour the cut potato strands into a bowl of water and soak for 2 minutes to remove the starch.

4. Slice the chili into thin circles, and wash the scallions and cut them into segments.

5. Heat oil in a pan, add the chili circles and stir-fry until fragrant.
6. Drain the soaked potato strands and pour them into the pan, stir-fry over high heat for 2 minutes.

7. Then pour in the pre-prepared sauce and continue to stir-fry evenly.

8. Finally, add the scallion segments and stir-fry briefly before turning off the heat.

Potatoes are easy to cook, crisp and refreshing are delicious, don't overcook them.
