Wuhan Hot Dry Noodles Recipe: A Homemade Guide
This recipe was given to me by a friend who opened a store in Wuhan, it’s a very authentic commercial recipe, and it’s a bit complicated to make. But it really does taste like authentic Wuhan hot dry noodles. When you make it, you can simplify it a bit.


1, Spice Water Recipe

2 kg of water, 2 star anise, 2 slices of cinnamon, 3 slices of star anise, 1/2 spoon of fennel seeds, 1 fruit stone, 1 small spoon of peppercorns, a small piece of galangal, 4 white mushrooms, 3g of Chinese rosewood, 2 nutmegs, 1 slice of ginger, 1/2 spoon of white peony, 1/2 spoon of cardamom, Wash all the herbs clean and put them in water, bring to a boil, simmer for 2 minutes, fish out the residue, let it cool down and reserve.
1 kg of spice water plus 20g of salt, MSG, chicken broth, a little sugar, a little vinegar, a little aged soy sauce, adjust to black reddish color.
2, Configuration of Mixed Seasoning
Chicken broth, MSG, thirteen spices, white pepper powder, configure in a ratio of 1:1:1:1, prepare.
3, Configuration of Sesame Paste and Seasoning Oil

1 kg of salad oil, put in star anise, fennel seeds, cinnamon, eight corners each a little, about 4 grams, white bud 8 grams, scallion, ginger, garlic, onion, coriander, celery each 1 200 grams. Wash all the herbs and vegetables clean and dry. Fry until golden yellow. The oil temperature is about 180°, don’t fry it badly. After frying, remove the residue in the pot and add about 1 kg of sesame paste and stir until smooth.
4, Production of Red Oil (you can buy ready-made Lidun red oil)

Salad oil 1 kg, chili powder 60g, 20g fried sesame prepared.
Fruit stone 2, Sichuan peppercorn 4g, galangal 8g, white peony 6g, clove 8g, white bud 2g, mountain 2g, fruit stone 1, galangal 4g, fennel seeds 8g, nutmeg 8g, licorice 2g, cinnamon 6g, cassia 3g, cardamom 5g, white peony 5g, eight corners 10g, star anise 8g, cumin 8g, when fruit 5g, dried tangerine peel 5g, peppercorns 2g.
All the herbs are ground into spice powder.
Heat the oil in the pot to 80% oil temperature, smoke. Take a soup bowl and put in 60g chili powder and 10g spice powder, 20g fried sesame. Pour the oil into the soup bowl, stand for one night before using.
5, Production of Peanuts

Raw peanuts add a little oil and stir-fry until cooked, cool down and crush them. Or buy a finished product.
6, Production of Finished Product

Put the alkali noodles and mung bean sprouts together in a pot, blanch them, fish them out into a bowl, add pickled radish, fermented bean curd, carrots, dried green onions, dried coriander, pour in spice water, add a little sesame paste, mix with mixed seasoning, red oil, peanuts, and stir until evenly mixed. It’s ready to eat.
