These glutinous rice pastries in Jiangnan are called differently from buns and steamed buns in the north; without fillings, they are called Yuanzi; with fillings, they are called Tangzi. The dough can be made directly from glutinous rice flour, or with the addition of pumpkin puree or green leaves to make them colorful.

Usually, glutinous rice balls are made with pumpkin, but this time I used green leaves, and the finished glutinous rice balls have a fragrant aroma, and the method is also a new variation, unlike before, simply kneading into round balls, using a mooncake mold, the finished glutinous rice balls look very cute, and the child especially likes them. IngredientsGlutinous rice flour 120g, rice flour 80g, red bean paste 250g, green leaves as needed, cocoa powder a little, white sugar 30g, boiling water as needed.
Method1Prepare the necessary materials, put 120g glutinous rice flour, 80g rice flour and 30g sugar into a basin and mix well.

2Gradually add appropriate amount of boiling water to make a slushy state and then knead into a soft and pliable dough that is not sticky.
3Add green leaves and knead into a soft and pliable dough, leaving out a little flour and cocoa powder to knead a small cocoa dough.

4Divide the kneaded green dough into portions of 25g each, and divide the red bean paste into portions of 25g each.

5Take a portion and knead it into a bowl shape and put it into the bean paste, use the back of the hand to slowly gather and tighten the mouth.

6Put the mooncake mold's flower shape on it and press firmly, then put the flower shape into the mold.

7Put the filled dough into the mold. Press firmly and then demold.

8Use the same method to make them all, then put them into the steaming basket, into the pot, over high heat, steam for 20 minutes.

Small Tips
1When adding boiling water, don't add it all at once, the amount should be adjusted according to the water absorption of the glutinous rice flour, and the final dough should be soft and pliable and not sticky.
2The ratio of glutinous rice flour to rice flour depends on personal preference, if you like a more glutinous taste, you can reduce the amount of rice flour.
