Pingyu Specialty Food – Crispy Dumplings (Gizi Jiao)
In Pingyu, every year-end, to welcome the New Year, every household makes crispy and delicious 'gizi jiao' (crisp pastry) to entertain guests. It's the most nostalgic and thick New Year flavor in the memories of the Pingyu people.
So, how is this delicious food made?
Step 1
You can use your favorite fillings – I use pork, tofu, and coriander. Adding tofu makes it soft, and you add seasonings just like for dumpling fillings – this doesn't need to be taught.
Step 2
Make the dough a little softer and roll it into thin sheets, the thinner, the better! There are also specialized vendors who make them even thinner. After buying it back, roll it up with the filling and fry it. This is a home-style version, haha
Step 3
Put the filling in, and lightly moisten the edges with water or a little dough glue, then roll it up.
Step 4
Cut it into pieces and fry over medium heat until lightly yellow and then remove it.
