Traditional Shandong Famous Food – Sahn

Ingredients (2-3 people):
Pearl Barley 2 large bunches, Beef 200-250g, Egg 1, Ginger 20-30g, Coriander, Sichuan Peppercorns, Chinese Licorice Root, Black Pepper, Salt, Vinegar as needed.
Instructions:
(1) Wash the pearl barley thoroughly and soak it in water; slice the beef into thin pieces; whisk the egg; slice the ginger.
(2) Add an appropriate amount of water, place the pearl barley together with ginger, Chinese licorice root, Sichuan peppercorns, and black pepper, bring to a boil over high heat and then reduce the heat to simmer for 30-40 minutes, until it becomes a thick porridge-like consistency.
(3) Add the beef slices, bring to a boil over high heat, add the egg to make egg flower, finally add vinegar, salt, and coriander, and it is ready to eat.

Expert Commentary:
Sahn (Sá) is a traditional famous food from LinYi, Shandong. Traditional Sahn is complex to make, it requires a long simmering of a broth made with large bones and ingredients made from Chinese medicinal herbs for 4+ hours, then combined with flour, pearl barley, etc. together with ginger, coriander, fragrant oil, and other condiments to cook, and the resulting Sahn has a milky white soup color, spicy and delicious, it can dispel wind and cold, promote digestion and stomach health, and is a common breakfast for local residents. Because it's seasoned with vinegar, it won't easily cause fire, even if consumed. Recently the weather is cold and damp, drinking a hot bowl of Sahn will warm the body and is a great choice.
Tips:
(1) Sahn made in LinYi usually includes medicinal ingredients; a common recipe includes clove, Sichuan peppercorn, Chinese licorice root, saffran, nutmeg, pomegranate seed, rose myrrh, cinnamon, Chinese prickly ash, white flower, fennel, ginger, nutmeg; if you are cooking it at home, add a few of these flavors, the flavor will be better.
(2) If you don't use beef, you can use chicken or lamb, which are also local specialties; if you don't have pearl barley, rice or millet can also be used.
(3) Pearl barley is difficult to cook through, you can also put it in a pressure cooker to cook together with ginger, Chinese licorice root, Sichuan peppercorn first.
(4) People with damp heat constitutions and easily prone to fire should not eat too much.
