Golden and Crispy Crust, Tender and Delicious Filling – This Traditional Snack is Surprisingly Simple

I previously made a thousand-layer meat patty and received rave reviews from my whole family. Now, I'm sharing another home-cooked dish—Chive Pie Box.

This staple food is probably familiar to everyone. It's common in Chinese restaurants and is a popular traditional snack in Northern China. It's also a festive food in some places, and I used to call it 'Big Dumpling' when I was a child.

Unlike ordinary dumplings and potstickers, the finished chive pie box has a golden and crispy outer crust, and the filling is chive-scented and crisp, creating a stark contrast. It's simply incredibly satisfying to eat!


Ingredients: Flour: 250g Warm Water: 130g Chives: 300g Eggs: 2 Shrimp: 8 pieces Dried Shrimp: As needed Salt: 1 spoon Cooking Oil: As needed

1, Use warm water to make the dough. The dough will be softer, and if you want a crispier outer crust, you can use lukewarm water.

2, Press the dough until it's smooth and non-stick. Let the pressed dough rest for 30 minutes.

3, Heat oil in a pot and stir-fry the eggs, breaking them into small pieces.

4, Chop the chives into fine pieces and mix with a little oil (any cooking oil is fine, I recommend using fragrant oil).

5, Mix all the ingredients and add 1 spoon of salt for seasoning.

6, After the dough has rested, press it into long strips and cut into small portions.

7, Roll out the small portions into round dough wrappers, similar to dumpling wrappers, but a bit larger.

8, Fill them with the just-mixed filling. Newcomers shouldn't pack too much, as the filling will expand during frying and is prone to breaking.

9, You can make a little flower edge, making it more beautiful.

10, Fry until both sides are golden brown before taking it out of the pan.

Grandma's musings: 1, Use warm water to make the dough. The dough will be more elastic and can achieve thin crust and a lot of filling.

2, During the dough resting period, you can put it in a proofing box. If you don't have one, cover it with plastic wrap to prevent it from drying out.

3, During the kneading process, the dough will become drier and drier, so don't add flour at the beginning. Knead for 3 minutes, and then decide whether to add flour (or add water).
