Three yellow chickens are characterized by their small size, 'three yellow' appearance (yellow feathers, yellow paws, yellow beak), and strong survival ability. This red braised three yellow chicken dish is a combination of meat and vegetables, with tender meat and a delicious flavor, and is rich in nutrients.

One three yellow chicken (1000g)
350g potatoes
10g Doubanjiang (fermented broad bean paste)
2 scallion, cut into segments
3 cloves garlic
3 slices ginger
3 dried chilies
1 star anise
1 piece of cinnamon stick
1 leaf of bay leaf
10 grains of Sichuan peppercorns
A little sichuan flower
5ml aged vinegar (Old Soy Sauce)
10ml light soy sauce
10ml cooking wine
A little salt
A little chicken broth (chicken essence)
Red braised three yellow chicken cooking process
1. Prepare the ingredients: Cut scallions into segments, a small amount of scallion leaves cut into scallion flowers, garlic cloves cut in half, ginger sliced, dried chilies broken into pieces, star anise, bay leaf, cinnamon stick, Sichuan peppercorns, sichuan flower.
2. First, wash and cut the three yellow chicken into pieces, soak in cold water for 20 minutes to remove the blood water, then take out the chicken pieces and drain them.

3. Peel and cut the potatoes into approximately 3 cm cubes, and drain them in water.

4. Heat up the wok and pour in a little oil, add 10g of Doubanjiang, stir-fry until it turns red.
5. Then add scallion segments, ginger slices, garlic, chili, star anise, Sichuan peppercorns, bay leaf, cinnamon stick, and stir-fry over high heat to release fragrance.

6. Add the drained chicken pieces, stir-fry until they change color, add 5ml aged vinegar and 10ml cooking wine, stir-fry to glaze, then add 10ml light soy sauce and stir-fry evenly.

7. Subsequently, pour in a little boiling water or broth, bring to a boil over high heat, cover the pot and reduce the heat to simmer for 15 minutes, then add the potato cubes and stir-fry, add a little salt and chicken broth, cover the pot and simmer for another 10 minutes, finally turn the heat up high and keep stirring to thicken the sauce.

8. Take out the dish, plate it, sprinkle with scallion flowers, and the red braised three yellow chicken is complete!
