Still worried about what to eat for breakfast? Try Glutinous Rice Red Bean Cake - Sweet, Soft, and Delicious!
This sticky rice red bean cake is similar to rice cakes, but with added red beans, offering a richer texture. It's simple and quick to make, perfect for breakfast to meet nutritional needs without wasting precious morning time. Additionally, consuming sticky rice in the morning is also easier to digest.

200g glutinous rice flour, 100g boiling water, 100g dried red beans, appropriate amount of white sugar.
① Soak the red beans in advance to reduce cooking time. It's best to soak them overnight and then wash them clean and put them in a pressure cooker with water, cooking for about 20 minutes. The water volume should be as minimal as possible, so the beans aren't overcooked and mushy; ideally, they should remain whole.
② Drain the cooked beans into a bowl, discarding any remaining cooking water. Add white sugar and mix until well combined, adjusting the amount of sugar to your liking.

③ In a bowl, add 200g of glutinous rice flour and pour in about 100g of boiling water to the flour. Boiling water increases the viscosity. If you prefer a sweeter texture, you can also add some white sugar to the glutinous rice flour. If you prefer a less sweet taste, you don't need to add any sugar because the red beans themselves already contain sugar. While pouring water, use chopsticks to stir until the glutinous rice flour forms large granules before kneading into a dough. The resulting rice dough should be relatively firm.
Finally, add the red beans mixed with sugar and directly knead them into the rice dough. It will be sticky, so wear disposable gloves.

④ On a lightly dusted board with glutinous rice flour to prevent sticking, shape the rice dough into long strips. Then cut them into evenly sized small squares.

⑤ Place the raw cakes in a steamer lined with muslin, ensuring adequate spacing. Bring the water to a boil, then steam for about 20 minutes.

Soft, sticky, and sweet, it's delicious even when cold. However, it may harden overnight; just steam it again and it will be just as delicious. Feel free to try it!
