Ingredients: High-gluten flour, corn flour, eggs, yeast powder, baking powder, salt, vegetable oil, water.

Step 1: In a large bowl, add 2 kilograms of flour, 2 eggs, 30 grams of corn flour, 5 grams of yeast powder, 3 grams of baking powder (you can omit it), 20 grams of peanut oil, and mix well.Many friends like to add baking powder when making dough sticks in order to make the dough sticks fragrant, fluffy and soft. You don’t need to add it, or just add a little, and it will be fragrant, crispy and soft. When we make the dough, we can add 2 eggs, and most importantly, we can add a little corn flour, which will make the dough sticks fragrant, fluffy and crispy without additives, nutritious and delicious!Secondly, add 600 grams of water at 30 degrees Celsius to the dough, and make a dough that is slightly softer. Because the water absorption of the flour is different, when making dough, you can adjust the amount of water accordingly. This dough is quite soft, and if it sticks to your hands, you can add a little water to rub it.
Step 3: To speed up the fermentation, you can put the kneaded dough into a stainless steel basin, add water to the basin to 30 degrees Celsius, and then put the basin into the water, which can shorten the fermentation time. After the dough ferments, poke it with a little salt water, and then cover it with a lid, let it ferment for 15 minutes. After poking with a little salt water, the dough will be fluffy, crispy and elastic.

Step 4: Spread a layer of oil on the cutting board, take a piece of dough, and directly pat it into a 5 cm wide long strip, then cut it into 2 cm wide segments.

Step 5: Stack the two adjacent pieces of dough on top of each other, use chopsticks to press down in the middle, pay attention to the chopsticks should be coated with a little oil to prevent sticking, and then press down gently, do not break the dough.

Step 6: Add vegetable oil to the pot, heat to 50-60% hot, adjust the heat to small, put a chopstick in to test the oil temperature, when the chopsticks have small bubbles, hands will take the dough stick, the oil stick will naturally stretch out, put the middle part of the dough stick into the oil, shake it left and right to form a shape, then take your hand and put the whole dough stick into the oil, use small heat to fry, until the surface is golden brown, then take it out and drain off the excess oil. I paired it with green bean sprouts that I had made myself, and a bowl of noodle soup with (bāyú ruanzi tāng - salmon ball soup), it was a great meal!
Warm tips:

Because I have many family members, I made 2 kilograms of flour at a time. If you have few people, you can reduce the amount of each ingredient accordingly.

The dough for making dough sticks should be made a little softer, the more soft, the better, and the dough sticks will be fluffy and soft after they are made. If the dough was made hard earlier, you can add more salt water when poking it.
