Ingredients:
250g yellow soybeans, 5g inner skin powder, a little light soy sauce, a little sesame oil, a little scallion, a little white sugar, a little rice vinegar
Cooking steps:
1. Soak the yellow soybeans in advance. I usually soak them overnight.

2. Grind the yellow soybeans into a puree using a food processor. If the quantity is not large, you can use a fully automatic bean curd machine to grind it. Then put it in a pot and boil it over high heat, then turn it to low heat and simmer slowly, so that the bean curd will be more fragrant.

3. After the bean curd is cooked through, turn off the heat and let it cool to 90 degrees, which is the state where a thin layer of bean skin has solidified on the surface. The ratio of inner skin powder is 500g bean curd plus 1.3g, this is 2000g of bean curd, so I need to add 5g of inner skin powder, use a little bean curd to dissolve the inner skin powder, pour it into 90 degrees of bean curd, stir with a spoon for one minute, then cover the lid and let it stand for 20 minutes.

4. After 20 minutes, open the lid and see that it has solidified very well.
