Tofu meatballs are also one of the characteristic snacks of Putian. In the local dialect, they are called 'water dragon'. They are usually eaten together with spiced pork. They are made of mashed tofu mixed with peanuts, dried shrimp, chopped celery and minced meat. They can also be vegetarian. Because of the coating of sweet potato starch, they won't scatter. They are cooked together with spiced pork soup, or with clams or conch meat soup base. Putian tofu is very special, with a firm and old tofu flavor, mixed with various fillings, which is unique in taste. I really like to eat tofu, so I also love to eat this one.

Pure vegetarian tofu meatballs can add shiitake mushrooms, peanuts, carrots, chopped celery and scallion, all of which need to be chopped finely. However, the conventional method is to add dried shrimp for more freshness.
Ingredients:
1000g tofu, 250g meat filling, a handful of dried shrimp, three to four stems of celery and scallions chopped into minced, 100g peanuts, two large tablespoons of fragrant oil.
Process:
1. Heat a little oil, put peanuts in and roast them over low heat. Grind them into powder using a glass bottle. If you have a mixer, you can use it directly, but don't grind them too finely, you need to keep the big granules, which can eat the fragrant taste of peanuts.

2. The sweet potato starch in the Putian area is coarse-grained, and you can crush it a little. Although coarse-grained, it will break with a pinch of your hand. Just a plate of sweet potato starch or sweet potato starch is enough, mainly to coat the outer layer of the tofu.
4. Mash or hand-pound the old tofu to break it into small pieces, and knead it evenly. Chop the meat filling into minced pieces, add dried shrimp, chopped celery and scallion, and chop them together.

5. Add the chopped meat filling, dried shrimp, celery and minced scallion to the tofu, and stir evenly. Add a suitable amount of salt and two large tablespoons of fragrant oil.

6. Take an appropriate amount of tofu filling, form meatballs in the palm of your hand, put them into a sweet potato starch bowl, roll around to coat them with starch.

The finished meatballs can be steamed or boiled in hot water. Make sure they are cooked through before storing. Besides eating fresh, the leftovers can be stored for two to three days. This portion can be eaten for three to four meals. Besides making soup, it can also be cooked with rice noodles, which is another delicious meal ~
