Sweet and Sour Baked Fish

Ingredients: 2 Fish, Garlic, Ginger, Cooking Wine, Soy Sauce, Vinegar, Hot Water, White Sugar, Green Onion

Steps: 1. Clean the fish, cut it into 4-5CM segments, and drain the water; 2. Heat a flat non-stick pan, pat the fish with a little dry starch, add a little oil to the pan, and add garlic and ginger to sizzle out the fragrance; 3. Add the fish segments, increase the heat and pan-fry until both sides are golden brown, spray in a little cooking wine, pour in a little soy sauce and vinegar (I used about 10g cooking wine, 40g soy sauce, 30g vinegar), add 50g hot water, increase the heat to boil the fish, shake the pan a few times, and sprinkle with white sugar (about 15g); 4. Use chopsticks or a spatula to gently flip the fish, shake the pan again to make the fish fully wrapped in the sugar and vinegar sauce, when the sauce becomes very thick, turn off the heat, sprinkle with green onion, and serve.
